SOUVENIRS OF THE PAST
by Josefine Skomars
In Saint Petersburg the history of the city and the regimes that shaped it is preserved in the grandeur of its candy-coloured architecture as well as in the simplicity of the dishes served at local cafeterias. In a country with restricted borders, the Russian kitchen has found its inspiration within, from all corners of the country as well as from the former Soviet nations. Nearly 30 years after the end of the Soviet Union the flavours of the past are enjoyed with friends at its remaining establishments, filled with nostalgic memorabilia.
